To remove parts considered too difficult to understand (for example Nephilim, Harrowing of Hell by Jesus) or too uncomfortable or explicit for churchwomen and children e.g. menstruation, incest, rape, hell, demons and similar stuff considered scary.)
It’s a fascinating book.

Because you need a coherent and consistent story to base your theology upon. There’s still a lot of inconsistency and contradictions in the bible but overall it supports the intended purpose of christian theology i.e God made man. Man sinned. God sent his son to die inorder to forgive man. If man accepts the son he goes to heaven back to God. Nice and simple.
It’s also why we have the apostles Creed and the updated version the nicean creed. To affirm what Christianity is all about lest someone gets other ideas.
