its a newfangled thing the kids call “soy sauce” … its usually really dark and i actually eat mine with the least amount of soy sauce so that bowl is actually the “cleanest” on that table. Also, these confused Chinese actually serve noodles in a bowl! I was waitin’ on them to bring my noodles on a platter!

Do they make the soy sauce at the restaurant? Is it the mushroom dark soy sauce or light soy sauce. I personally like the mushroom dark soy sauce but can also do with the traditional chinese soy sauce. If it’s the dark variety you add just a little and mix really well. I love soy sauce… unfortunately I can’t make it at home like I do with other sauces. It comes second after mint sauce
They import it from China. I like that they go to the trouble of getting the original variety which takes a full year to “mature” … but that means its too strong for my poor palette so I can only use a tiny bit on my food.
