Saturated fat comes mainly from animal sources of food, such as red meat, poultry and full-fat dairy products. But they can also be found in some plant foods, such as palm oil and coconut oil. For decades, eating saturated fats has been miss-portrayed (based on faulty science and food-industry vested interests) to increase the risk of cardiovascular disease and raise cholesterol up until now.

Our Grandfathers used to preserve meat using animal FAT. In Kikuyu it is called RUKURI
After slaughtering an animal the excess fat was trimmed from the meat and melted and while still hot put in a big earthen pot.
Meat was then boiled and the dipped into the molten oil, The meat sank to the bottom. As the molten oil cools it seals and encases the meat eliminating air and all bacteria. That meat was preserved for up to 120 days sometimes longer in colder regions such as Nyadarua and Limuru.
Kazi ilikua kuchota hio mafuta kidogo kidigo na wooden spoon and used to cook.
Umesahau kusema he added honey too as a preservative. Rukuri could last over a year.
How I miss it.
