The secret to making meat soft is to slow-cook it. Part of the problem is we boil that meat at 100 degrees and expect it to be soft just because it turned brown in 45 minutes. Cook it on medium heat for 6-8 hours , it will break down and be really soft. Pressure cooker is speed cooking, it takes away that slow cooked flavor.
