I woke up and wanted quiche, so I made one with ham, Dutch Bicycle Cheese and scallions. Turned out great. Quiche is nice for being able to use whatever happens to be in the refrigerator.

The Dutch Bicycle Cheese is something I found at Costco and decided to try it in different recipes. It has a Gruyere quality but sharper. It melts well.
